Proposal: Incorporate a ddev command to differentiate between hybrid and full FSE

• Ideal result would be that there would be instructions and an automation that devs could use on project spinup to either configure the templates to be the hybrid gesso or FSE gesso
• Potentially having both sets of template existing upon initial install.

@christopherhodges I likely wont have time to address this in the next two weeks so could you please collaborate with @jackmakesthings to look into this. You may also be able to loop in @rjensen26 with quesitons on DDEV scripting.
