colors documentation could be improved with more info on overrides

The documentation on colors (https://lefthook.dev/configuration/colors.html) could possibly benefit from some additional details on overriding the configured setting:

1. It could help to specify that the appropriate values for --colors on the command line are on, off, or auto (although see --colors=on on cmd line doesn't override colors: false setting #1305).

2. It could also be useful to mention the overriding environment variables here (CLICOLOR_FORCE and NO_COLOR) in the colors section, even though they are already documented in the environment variables section
